Grenadian cheese paste

(Serves: 2-4)
Ingredients

1 cup finely grated cheddar cheese
1/4 teaspoon finely grated onion
1 tablespoon mayonnaise

1 tablespoon butter/margarine
1/2 teaspoon mustard
1 finely grated pimento pepper
Dash of pepper sauce or black pepper (optional)

Directions

Mash all ingredients together using the back of a fork or blend on very low speed in a food processor. Serve immediately. Use as a spread for tea sandwiches, add sliced cucumbers for a beautiful contrast

Tips
Put cheese in freezer for 10 minutes for better grating
Use the smallest holes on your grater for all ingredients

Consistency should be slightly chunky yet spreadable.

Add a tablespoon of cream cheese and an avocado and pulse to a smooth consistency in a food processor to use as smooth and creamy avocado and cheese dip!
